Mexican Chicken Enchiladas

Ingredients:

  • Cooking oil (6 tbsp)
  • Chicken breast (500 grams, cut into small pieces)
  • Garlic paste (1 tbsp)
  • Cumin powder (1 tsp)
  • Red chili powder (1 tsp)
  • Paprika powder (1 tsp)
  • Salt (½ tbsp)
  • All-purpose flour (2 tbsp)
  • Tomato puree (2 tbsp)
  • Water (4 cups)
  • Chicken powder (1 tbsp)
  • Mexican 3 cheese blend (1.5 cups and an additional 1 cup for later)
  • Tortillas
  • Avocado, sour cream, and salsa for garnishing

Procedure:

Heat 2 tbsp cooking oil in a pan and add chicken breasts. Cover and cook on medium-low flame. The chicken will release its moisture, and you'll cook it until all of the water dries up.

Meanwhile, take another saucepan and heat 4 tbsp of cooking oil and 1 tbsp of garlic paste for 30 seconds before adding anything else. Next, add red chili powder, cumin powder, paprika, salt, and cook for 20 seconds while stirring fast. Now add flour and tomato puree and go for a minute.

Then, add 4 cups of water slowly while whisking continuously. Put chicken powder, mix well, cover, and cook on a medium flame for 10 minutes. When the chicken breast cubes are all dried up, put 1.5 cups of the prepared sauce there. Let both chicken and sauce cook for 5 more minutes.

Take both off the stove and pour half of the sauce into a tray. Use the chicken to fill tortillas (2 tbsp each). Place the tortillas in the tray on top of the sauce and pour the remaining sauce on top. Put a good amount of cheese and bake at 375°F for 25 minutes or until the bubbles are formed. Garnish with salsa, sour cream, and avocado cubes and present it to your guests.

  • Spiral pasta (350 grams)
  • Cooking oil (4 tbsp)
  • Garlic cloves (4, chopped

  • Tomatoes (3, chopped)
  • Chicken minced (350 grams)
  • Salt (1 ½ tsp)
  • Red chili powder (1 tsp)
  • Cumin powder (1 tsp)
  • Black pepper powder (1 tsp)
  • Soy sauce (1 tsp)
  • Water (4 cups)
  • Spinach (1 cup, chopped)
  • Cheddar cheese (½ cup, grated)
  • Mozzarella cheese (½ cup, grated)

Procedure:

Saute garlic and onion in a saucepan until translucent. Put tomatoes, cook for 2 minutes, add chicken and cook for 5 minutes. Add ½ tsp salt and the spices and cook for a minute. Put spinach in there and cook for 3 minutes. Add water and 1 tsp salt, bring it to a boil, put spiral pasta, cover, and cook for 13-15 minutes while stirring after every 3 minutes.

Whole Fried Fish

Ingredients:

  • Whole fish (1 kg)
  • Oil for frying
  • Vinegar (4 tbsp)

To prepare the spices mix:

  • Coriander seeds (2 tbsp)
  • Cumin seeds (2 tbsp)
  • Carom seeds (1 tsp)
  • Salt (1 1/2 tsp)
  • Mustard powder (1/2 tsp)
  • The citric acid (1/4 tsp)
  • Button red chilies (4)
  • Turmeric powder (1/2 tsp)
  • Red chili powder (1/2 tsp)
  • Rice flour (2 tbsp)
  • Gram flour (2 tbsp)

Procedure:

Take 3 whole fish (around 1 kg) and soak them in a tub of water with vinegar and 1/2 tbsp salt for 40 minutes. After that, make 3 cuts on both sides of the fish using a knife.

Powder all the spice mix ingredients together. Cover the fish with this spice mix. Make sure it reaches inside the cuts. Let it rest for 30 minutes. Fry the fish in hot oil on medium flame until it turns golden brown.

  • Zucchini (3 large)

  • Lasagne noodles (12)
  • Ricotta cheese (1 cup)
  • Mozzarella cheese (1 cup)
  • Parmesan cheese (1 1/2 cup)
  • Marinara sauce ( 4 cups)
  • Basil leaves (1/4 cup, torn)
  • Black pepper (1 tsp)

Procedure:

Cut zucchini into large, thin strips and put a single layer in a tray lined with olive oil and parchment paper. On top of the zucchini slices, put parchment paper and another layer of zucchini and repeat the same process one more time. Sprinkle salt on every layer. Let it stand for 15 minutes.

Line a tray with olive oil, layer lasagne noodles, then marinara sauce, and spread evenly. Next, add layers of ricotta, parmesan, and mozzarella cheese. Now layer the zucchini slices and top with basil and black pepper. Repeat the process two more times, except the top zucchini layer is arranged in a lattice design.

Cover with aluminum foil and bake at 375°F for 65 minutes. Let it cool and cut into equal pieces. Serve them in our fancy disposable bowls.

Ingredients:

  • Yogurt (3 cups)
  • Boiled potatoes (cubed, ½ cup)
  • Cooked chickpeas (½ cup)
  • Chopped onions (3 tbsp)
  • Chopped tomatoes (2 tbsp)
  • Tamarind sauce (4 tbsp)
  • Mint sauce (4 tbsp)
  • Gram flour (4 tbsp)
  • Red chili flakes (¼ tsp + ¼ tsp)
  • Cumin powder (½ tsp + ¼ tsp)
  • Salt (¼ tsp + ¼ tsp)
  • Baking powder (one pinch)
  • Oil (for frying)

Procedure:

Add salt, cumin powder, red chili flakes (¼ tsp each), baking powder, and gram flour in a bowl. Mix water and make a not-so-thick, not-so-runny paste. Let it sit for 10 minutes and fry small amounts (a tablespoon full each). Take them out of the oil and put them directly into cold water for 30 seconds. Gently press them with your hands, so the water gets out.
