In a large bowl, take 3 cups of bechamel sauce, 1 cup ham, 1 cup gruyere, 1 cup Emmental, 1 cup dijon, 1 teaspoon of salt, and a teaspoon of black pepper. Mix until well combined, evenly distribute them in ice cube trays and toss them in the freezer for about 4 hours.
Make small balls out of pizza dough (20 grams each) and put one frozen cube inside each ball. Lay these dough balls on a baking tray lined with parchment paper and brush with egg. Bake these ham and cheese balls at 200°C for 30 minutes.

Peel and cut two large potatoes and soak them in water for about 10 minutes. After that, put them in boiling water with 1 teaspoon salt for about 4 minutes to partially cook them. Remember, they should only be 50% cooked. You do not want to cook them completely.
Spread your half-cooked potatoes on a cloth and sprinkle 2 tablespoons of cornflour on them. Let them dry for a bit in the open space, after which you will fry them in hot oil until their color turns light brown. Take them out of the pan, soak excess oil, and put them on a serving plate.
Meanwhile, prepare the cheese sauce. Put 1 tablespoon of butter in a pan on medium heat. Add around 2 tablespoons of finely chopped onions and let them saute. Onions will give this sauce the desirable texture. Add a pinch of red chili powder and a pinch of turmeric and mix. In the end, add 2 cheese slices and 2 tablespoons of mozzarella cheese and let it cook for a minute while you stir continuously.
